As November rolls un I try to embrace the art of cozy. The Danish people have a word for this feeling called Hygge. Bringing coziness into your home is simple, it can be as easy as, lighting a candle at breakfast, eating dinner by your fireplace, putting out soft fluffy blankets, and of course baking. Baking fills your home with cozy smells, your tummy with comfort, and you heart with warmth. These muffins are like a warm hug on a cold day, what more could you want?
Topping:
1/4 tsp cardamom
1/4 cup finely chopped walnuts
1/4 cup brown sugar
Muffins:
1 1/2 cup all purpose flour
1 cup quick oats
2 tsp baking powder
1 tsp kosher salt
1 tsp cardamom
2 large eggs
1 stick butter melted, and slightly cooled
1/2 cup whole milk
1 large apple peeled and diced (1 1/2 cup diced apple)
Directions:
1. Preheat oven 350f
2. Line a muffin tin with large muffin cups.
3. In a small bowl combine topping ingredients, and set aside.
4. In a large bowl, combine with a fork, flour, oats, baking powder, salt, and cardamom. Set aside.
5. In a medium now, using an electric hand mixer, mix eggs, butter, milk, until combined, and fluffy.
6. Fold in apples.
7. Using a rubber spatula mix the wet mixture into the dry and scoop into prepared muffin cups.
8. Sprinkle with topping mixture.
9. Bake for 20-25 minutes, and cool in pan for a few minutes.
