Getting outside in the winter time can be made so much more enjoyable, especially when you know you have a warm satisfying meal ready and waiting for you when you get home. So go skiing, sledding, skating, whatever it may be, just make sure you make this chicken stew to Après your winter activity. (Après ski is usually associated with an alpine lifestyle meaning, after ski)
Après Chicken Stew
1/2 onion diced
3 carrots peeled and sliced into 1/4 inch coins
2 celery sticks sliced 1/4 inch half moons
2 russet potatoes peeled and cubed
4 chicken breasts
1 tbsp olive oil
1 tbsp butter
3 cups chicken broth
1/4 cup flour
2 sprigs fresh thyme
Kosher salt
Fresh ground pepper

Try not to rush the steps. This stew can be made ahead, or even frozen, reheat slowly over medium low.
Après Chicken Stew

Directions
- Prepare all vegetables and set aside.
- Cut chicken breast into bite sized pieces and sprinkle with 1/2 tsp pepper.
- In a large pot or dutch oven heat olive oil over medium high heat.
- Add chicken and sauté for about 4 minutes stirring and browning all sides.
- Remove chicken to a plate and set aside.
- Turn the heat down to medium, melt butter in the same pot the chicken was cooked in.
- Add onion and continue to cook until softened, about 2 minutes.
- Now add the prepared vegetables and cook for 4 minutes.
- Add the 1/4 cup flour, 1/2 tsp pepper, 1.5 tsp Kosher salt, and continue to cook for another minute, stirring to get everything coated.
- Now add the chicken and all collected juices back into the pot.
- Add chicken stock, thyme sprigs, and cook for 20 minutes, or until potatoes are fork tender.
- Serve with crusty rolls or biscuits.
