When you are looking for a flavour bomb, this is it! If you like things spicy add a nice drizzle of sriracha, if not, a squeeze of lime will do.
Asian-Inspired Shrimp Cake Bowl
1 small shallot
1/2 inch knob of fresh ginger peeled
1 pound raw peeled shrimp
1 tbsp mayonaise
1/2 tsp sriracha
1/2 tsp lime zest
1 tsp lime juice
1/4 cup Panko bread crumbs
Slaw (recipe as follows)
2 cups cooked rice
Cilantro and extra sriracha (optional garnish)

2 cups slaw mix
2 tsp lime juice
1 tsp honey
Salt and pepper

Directions:
- In a food processor, chop up shallot, and ginger, until finely minced.
- Add shrimp, and pulse a couple times until a medium sized mince remains.
- Add mayo, sriracha, lime zest, lime juice, and Panko, pulse a couple times until combined.
- Form into small scant 1/4 cup patties. (Makes about 6)
- Fry over medium heat in a non stick pan, for about 2 minutes per side.
Slaw
2 cups slaw mix
2 tsp lime juice
1 tsp honey
Salt and pepper
Directions:
- Toss all slaw ingredients together.
- Place desired amount of rice on the bottom of a shallow bowl, top with 2-3 shrimp cakes, slaw, some fresh cilantro, and a drizzle of sriracha if desired, a sprinkle of salt, and serve with lime wedges.
