Starting your holiday prep now is the perfect way to ensure a relaxing joyful season, without the rush. Using your freezer is key, there are so many things you can make ahead and freeze to help you through the busyness of December. For starters you can freeze these cookies, gingerbread loaves, savoury crackers, soups, and pasta sauces, every little bit counts toward a moment of peace next month.
Lemon Cranberry Shortbread
1 cup room temperature butter
1 cup icing sugar
1 tsp lemon zest
2 tbsp lemon juice
2 cups all purpose flour
1/2 cup dried cranberries
Vanilla Glaze
1/3 cup icing sugar
2 tsp vanilla extract
1-2 tsp water

Directions
- Prepare 2 baking sheets with parchment. (You don’t have to use, but it saves on the cleaning up)
- Preheat oven to 325f
- Combine butter and sugar in the bowl of an electric mixer fitted with the paddle attachment. (alternatively use hand mixer)
- When well combined add lemon zest and juice.
- Next add flour, and cranberries, and mix until crumbly and combined.
- Now if you want to make shapes with the dough, you will need to chill it for at least 15-30 minutes, then roll out and cut into shapes. Otherwise spoon mixture onto prepared baking sheets.
- Bake for approximately 15 minutes, and cool completely before adding glaze.
- In a small bowl add glaze ingredients, starting with 1tsp of water, stirring, adding extra if needed, to create the consistency of a thick but able to drizzle glaze. Drizzle on cookies.
