These days I am always looking for a quick meal that still satisfies. This sheet pan salmon checks all the boxes, and it tastes incredible too! Serve with a side of rice.
Lemon Sheet Pan Salmon
4-5 fillets of skinless salmon (centre cut)
2 cups green beans washed and trimmed
1/2 cup melted butter
2/3 cup Panko breadcrumbs
Zest of 1 lemon
2 garlic cloves crushed
1/2 tsp fresh minced rosemary
1/2 tsp kosher salt (plus more for finishing)
1/4 tsp pepper
Directions:

Directions:
- Preheat oven to 425f
- In a small bowl mix Panko bread crumbs, lemon zest, garlic, rosemary, salt, and pepper, set aside.
- On a large baking sheet arrange green beans, and salmon fillets, spacing everything out as too not overcrowd.
- Pour melted butter over salmon first, and remaining over green beans.
- Spoon a couple tablespoons of panko mixture onto each piece of salmon. Any remaining mixture, sprinkle over green beans.
- Bake 10-13 minutes depending on thickness of salmon, and desired amount of doneness. Salmon should flake away easily when ready.
- Give the pan a nice sprinkle of salt after. Serve with rice or potatoes.
