You don’t need a holiday to make these nachos, they are smoky, sweet, cheesy, and delicious. The blue corn chips add to their Halloween mystique, but of course you can use any colour chips you like (Just make sure they are hearty). These nachos are completely customizable, and can easily be doubled depending on the size of your crowd, or appetite. One thing is for sure, once you have made them, they will haunt to make them again! Happy Halloween.
1/2 bag of Blue corn tortilla chips (kettle style)
2 fresh chorizo sausages casing removed (I used Presidents choice)
1 garlic clove crushed
3 cups shredded white or orange aged cheddar cheese
1/4 cup black beans drained and rinsed (optional)
2 thinly sliced mini sweet peppers (into rings)
Seasoned salt to taste
2 thinly sliced green onions (white and light green parts)
Handful of cilantro chopped (optional)
Salsa and Guacamole for serving
Directions
1. Preheat oven to 350f
2. Line a baking sheet with parchment paper, set aside.
3. In a small frying pan cook and break up the sausage until just browned.
4. Add garlic and cook for an addition minute, set aside.
5. Arrange chips on prepared sheet pan, topping with shredded cheese, then chorizo, beans if using, pepper rings, and a sprinkle of seasoned salt.
6. Bake for 12-15 minutes.
7. Cool slightly and top with green onion, and cilantro.
8. Serve with store bought salsa and guacamole.
