Ingredients:
1 1/2 cups all purpose flour
2 1/4 cup quick oats
1 tsp baking soda
2 tsp cinnamon
1/2 tsp salt (I use kosher)
3/4 cup room temperature butter
1 cup brown sugar
1/2 cup granulated sugar
2 eggs
2 tsp vanilla extract
1/4 cup diced crystallized ginger
3/4 cup semi sweet chocolate chips

Directions
- Preheat oven to 350f
- Line 2 baking sheets with parchment paper.
- In a medium bowl using a fork combine flour, oats, baking soda, cinnamon, and salt. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment (or in a large bowl with a hand mixer) beat the butter and sugars until well combined, add one egg at a time, and follow with vanilla.
- Add dry ingredients to butter mixture, and mix until just combined, add ginger and chocolate chips, being careful not to over mix, but making sure all ingredients are incorporated.
- Portion cookie dough onto prepared baking sheets using a small ice cream scoop or two spoons.
- Bake for about 13-15 minutes. Cool for a few minutes on the pan afterward. Then transfer to a wire rack.
