With or without the honey butter, these are a treat.
Main Ingredients1/3 tbsp plus 2 sugar
2 tsp orange zest
2 cups all purpose flour
1 tbsp baking powder
1/4 tsp salt
1/2 cup chopped pistachios
1/3 cup melted butter
3/4 cup whole milk
1 egg
Honey Butter:
1/4 cup salted butter
2 tbsp honey

Recipe Steps
- Preheat oven to 350f
- Spray a muffin tin with cooking spray, and set aside.
- In a small bowl combine, 2 tbsp of sugar with orange zest, and set aside.
- In a large bowl combine lightly with a fork, flour, baking powder, salt, 1 tsp of orange zest mixture. Add chopped pistachios.
- In a medium bowl melt butter. Add milk, and egg, stir to combine (mixture will look lumpy) Pour wet ingredients into dry, and mix lightly until just combined. Scoop into prepared muffin tin, and top with remaining zest/sugar mixture.
- Bake for 20 minutes. Cool on rack.
- For the honey butter: whip butter, and honey with an electric mixer, until combined.
