Main Ingredients1 roasted sweet potato split in half (oven roasted for about an hour at 350f)
3/4 cup canned black beans drained and rinsed
2 tbs salsa
pinch of smoked paprika
2 tbsp shredded cheddar cheese
salt and pepper
avocado cubed
cilantro chopped
green onion diced

Recipe Steps
- In a small sauté pan over medium low heat, cook the beans, salsa, paprika, and 1tbsp of cheese (saving the other tbsp for garnish).
- Spoon bean mixture over warm sweet potato halves, sprinkle with remaining cheese, avocado, cilantro, green onion, salt and pepper. Don't skip the green onion, it makes the flavours pop!
