1 Cup Cherries Pitted and Halved
2 Tbs Sugar
1/2 Tbs Lemon juice
1/2 Vanilla Bean
1 Cup Plain Greek Yogurt (I use lactose free)
In a saucepan combine cherries, sugar, and lemon juice, cook on medium low heat for 12 minutes, and thickened. Remove from heat and cool. Scrape seeds from half vanilla bean, and combine with yogurt. Layer into 2 clear glasses, and serve.
