If you've been to our house, you've likely had this salsa, I confess I make it all the time, it is the perfect snack with chips, or accompanies any taco, nacho, burrito, you name it. Enjoy.
Oven Roasted Salsa
3 Medium Tomatoes
1 Small - Medium White Onion
3 Garlic Cloves (skins on)
1/2 Jalapeno seeded
Blender Ingredients
1/2 of a Lime
Coarse Salt & Pepper
1/4 cup Cilantro Chopped
Preheat broiler with rack set on top (set at 450 if you have the option). Place tomatoes, onion, garlic and jalapeño on a baking sheet and broil for 8 minutes and slightly charred.
Cool. Discard garlic skins, and transfer to a blender. Pulse ingredients, adding juice of half a lime, salt, pepper, and chopped cilantro, chill and serve. This salsa stays good for at least a week in the fridge.
