3 oz fresh raspberries
3 tsp raspberry jam

- Make pie filling according to package, and set aside to cool.
- Whip remaining 2 eggs whites until forms soft peaks, whisk into slightly cooled pie filling until combined.
- Pour about 1/2 cup lemon mixture into jars or serving dishes, and set in fridge while you prepare the raspberry compote.
- Combine raspberries, jam, and 1/3 cup of water in a small saucepan, cook over medium low for 10 minutes, stirring often, take off heat and cool in pan for 2 minutes.
- Scoop 1 tbsp of raspberry compote into each jar over the lemon mixture, and cool in fridge for at least an hour.
