1 1/2 flour
1 cup quick oats
2 tsp baking powder
1 tsp kosher salt
3/4 cup sugar
1 stick butter room temperature
2 large eggs
1/2 cup milk
1/2 tsp almond extract
1 apple peeled and small diced

Recipe Steps
- Spray muffin tin with cook spray, set aside. In a large bowl combine flour, oats, baking powder, salt, mix lightly with a fork. In a separate bowl with electric mixer cream together sugar and butter until light and fluffy about 3 minutes, add eggs one at a time until incorporated, then add milk and almond extract. Using a spatula mix the wet ingredients into the dry, careful not to over mix, fold in apples. fill muffin tins 3/4 full. and bake for 20 minutes.
- Glaze- mix icing sugar and extract in a small bowl, drizzle over cooled muffins. (add a touch of water if needed to get drizzling consistency).
