Very versatile, use them as a appetizer, lunch, or even dinner. You can use boneless skinless chicken thighs, or even a combination.
Main Ingredients4 chicken breasts cut into 2 in pieces
1/4 - 1/2 cup Panko bread crumbs
1/4 rough chopped mint
1 tsp dried oregano
1 garlic clove crushed
2 tsp kosher salt
1 tsp pepper
1 zest of lemon
Olive oil for frying or baking
finely grated parmesan and lemon zest for sprinkling (optional)

Recipe Steps
- In the bowl of a food processor pulse the chicken 10 or so times to get it started. Add Panko, mint, oregano, garlic, salt, pepper, and lemon zest, continue pulsing until all Incorporated, and paste like.
- Heat 1-2 tbsp olive oil in a frying pan. Scoop 1-2inch balls from chicken mixture, and fry until golden and cooked through (approximately 15 min). Or you could bake the meatballs, drizzle with olive oil, 350f for 20 minutes.
- After they have cooled slightly, give them a light dusting of parmesan, and lemon zest. Serve with tzatziki, hummus, or even plain.
