The most requested soup in our house.
Main Ingredients
2 tbsp olive oil
1.5 pounds marbled stewing beef cut into 1 inch cubes
1 cups chopped onion
3 garlic cloves crushed
1 tsp dried thyme
2 tbsp tomato paste
1 cup chopped carrots
2 bay leaves
1/4 cup pearled barley
6 cups beef broth
Salt and pepper

6 cups beef broth

Recipe Steps
- In a large pot heat oil over high heat, sear beef until browned on all sides. Turn heat down to low, remove beef with slotted spoon, and set aside.
- Add onions to the pot cooking until soft about 5 minutes, add garlic, thyme, and tomatoes paste, cooking for 1 more minute.
- Add remaining ingredients, and beef, bring to a boil. Reduce to simmer, and simmer on the stove for about 1.5 hours until beef is tender. Remove bay leaves. Season with 1 tsp salt and 1/4 tsp pepper.
