4oz Goat cheese crumbled
1 tsp lemon zest
1/2 tsp fresh thyme leaves chopped
1 small garlic crushed
pinch of salt and pepper
5 vine ripe tomatoes chopped
1/4 cup kalmata olives diced
1 shallot finely diced
12 leaves basil julienne
1 tbsp olive oil
pinch of salt and pepper
1 baguette sliced drizzled with olive oil, salt and pepper, and toasted under the broiler for about 10 minutes.

- Combine goat cheese, zest, thyme, garlic, salt and pepper, with a fork. Set in fridge until serving.
- Combine tomatoes, olives, shallot, basil, oil, salt and pepper. Let sit for 5 minutes, and serve with baguette toasts, and goat cheese.
