Homemade mincemeat is a Christmas treasure, it's a great way to use up those leftover Thanksgiving cranberries, and it lasts for a loooong time in the fridge.
Main Ingredients
1 cup apple cider
1 cup brown sugar
1 pear grated
1 green apple grated
2 cups fresh cranberries
1.5 cups raisins
2 tsp cinnamon
1/2 tsp cloves
1/2 tsp all spice
1/2 tsp grated fresh ginger
1/4 cup brandy (I used St Remeys)
1 tsp vanilla

Recipe Steps
- In a large pot, over medium low heat, warm the cider and sugar until sugar has dissolved, stirring with a wooden spoon.
- Next add the pear, apple, raisins, and spices, continue to cook over medium low for about 20 minutes, stirring ever so often.
- Once the mixture has thickened, remove from heat, and stir in brandy and vanilla. Pour into jar, and refrigerate for at least 2 weeks before using. Will last in fridge for up to a year, or more. Use to fill tarts, pies, or use like a jam and slather on a muffin.
