1/2 cup butter (room temperature) or margarine
1 cup brown sugar
2/3 smooth peanut butter
1 large egg
1 tsp vanilla extract
1 3/4 all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 tbsp granulated sugar for sprinkling

Recipe Steps
- Preheat oven to 375f
- Prepare baking sheet with parchment paper.
- With an electric mixer cream together butter and sugar until light and fluffy, add peanut butter, egg, and vanilla, mix until combined.
- Add flour and baking soda, and salt, mix until just incorporated.
- Using a small ice cream scoop or spoon scoop out 1.5 inch amounts and roll into balls, place 1-2 inches apart on prepared baking sheet and flatten each ball slightly with fork.
- Sprinkle lightly with sugar, and bake for 11 minutes. Cool on rack.
