Main Ingredients
1 can chickpeas drained
1/2 cup parsley chopped
1/2 cup cilantro chopped
2 green onion chopped
2 garlic chopped
1/2 tsp ground cumin
salt and pepper
1/4 tahini
1/2 lemon juice
2 - 3 tbsp water
1 head romaine chopped
2 Lebanese cucumber sliced
1/2 cup grape tomatoes sliced
1/4 red onion thinly sliced
1/2 cup feta crumbled
1 tbsp pomegranate seeds
sprinkle sumac

Recipe Steps
- In a food processor combine chickpeas, parsley, cilantro, green onion, garlic, cumin, salt and pepper to taste, pulse until the size of peas, scoop 1/4 cup amount and form into patties, fry in frying pan until golden and toasted on both sides.
- In a small bowl, combine tahini, lemon, and water to thin mixture. Set aside.
- Arrange salad ingredients in bowl, top with warm falafel. Drizzle dressing over salad, and sprinkle with sumac, salt, and pepper.
