The key to good leftover turkey soup is low and slow.
Main Ingredients
1 left over turkey carcass
10 tsp chicken oxo (unless you brined your turkey, if that's the case leave out all additional salt until final tasting/seasoning)
20 cups of water
1 cup carrots diced
1 cup celery diced
1 onion diced
1 28 oz can diced tomatoes
1/2 cup pearl barley
2 cups left over turkey chopped
Lots of pepper
Taste for salt

Recipe Steps
- Place leftover turkey carcass, 20 cups of water, 10 tsp chicken oxo (if using) into a large pot. Bring to a boil, then reduce to simmer, simmer for 5 hours breaking up bones, and stir occasionally with a wooden spoon. Strain (discarding bones), and refrigerate for at least an hour.
- Skim off fat with a slotted spoon. bring stock back to a boil, and add remaining soup ingredients, reduce heat to simmer, and simmer for 2 hours, season with salt and pepper.
