My very quick version of Singapore noodles.
Main Ingredients
3 tbsp soy sauce
2 tsp mild curry paste
1 6 oz package rice noodles
1 tbsp vegetable oil
2 garlic cloves crushed
5 green onions chopped
1 green or red pepper sliced
1 can baby shrimp drained

- Mix the soy sauce, and curry paste in a small bowl, set aside. In a large bowl pour boiling water over rice noodles, and let sit for 3 minutes, then pour noodles into a strainer and rinse with cold water for a minute. Set aside. In a large skillet heat oil over medium high heat, Add peppers, garlic, green onions, cook for 1 minute, add shrimp, noodles, and sauce, cook for 2-3 additional minutes.
