A winter forever favourite.
Main Ingredients2 cups all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 kosher salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 1/2 cups frozen cranberries chopped
1 cup granulated sugar
4 tablespoon room temp butter or margarine
1 egg
2 teaspoons orange zest
3/4 cup orange juice
Topping:
1/2 teaspoon cinnamon
1/4 cup brown sugar
1/2 cup chopped walnuts

Recipe Steps
- Preheat oven to 350f.
- Prepare loaf pan (alt. will fill 3 mini loaf pans) with cooking spray.
- In a large bowl combine all dry ingredients up to sugar, and chopped cranberries. Set aside. With a hand mixer, or stand mixer, blend sugar and butter until light and fluffy about 3 minutes, add egg, and juice, combine.
- Pour dry ingredients into wet, and mix lightly with a spatula. Pour into loaf pan (or pans).
- In a small bowl combine topping ingredients. Sprinkle on top of the loaf batter.
- Bake for 50-60 minutes for full loaf. 30-40 for minis. Cool in pan on a rack, for 10 minutes before removing.
