Could be lunch or a side, serves two with left over dressing.
Main Ingredients
Balsamic dressing
1/2 cup olive oil
1/4 cup balsamic vinegar
1 tsp brown sugar
1 tsp dijon mustard
1 garlic clove crushed
salt and pepper
Salad
4 cups spinach
1 ripe pear sliced
1/3 cup toasted walnuts
1/2 cup blue cheese (I used Danish) crumbled.

Recipe Steps
- Place all dressing ingredients in a blender, and blend for 30 seconds or so.
- Divide spinach, pears, walnuts, and cheese on two plates, drizzle with dressing. Pop left over dressing into the fridge for 1-2 weeks.
