A weeknight go to that's quick and inexpensive. Kids love it.
Main Ingredients1 pork tenderloin sliced into about 15 pieces
3 eggs lightly beaten
1 cup flour
2 cup Panko bread crumbs
Salt and pepper
2 tbsp vegetable oil
2 tbsp butter
3 cups Brussels sprouts sliced thin
2 tbsp butter or margarine
1 garlic clove crushed
salt and pepper

Recipe Steps
- In 3 shallow dishes, place eggs in one, flour in the second with 1/2 tsp salt and pepper, and Panko bread crumbs in the third.
- Flatten each piece of pork with a mallet, coat each piece starting with egg, then flour, then Panko.
- In a large skillet over medium heat melt butter and oil, fry each breaded piece of pork until cooked through and golden, about 2 minutes per side, keep warm in 200 degree oven until all the pork is fried.
- Serve with lemon wedges.
