1/4 goat cheese
1/2 tsp lemon zest
1/2 tsp chives chopped
2 large flour tortilla
1/4 cup red pepper diced
1/4 cup zucchini diced
1/4 cup black beans
1/4 cup aged cheddar shredded

- In a small bowl mix goat cheese, lemon zest, and chives, set aside.
- In a large frying pan sauté red pepper, zucchini, for 2 minutes, add beans, and cook for 1 more minute. Remove vegetables and assemble quesadillas.
- Split the toppings in half and spread over half of each tortilla, sprinkle cheddar, and goat cheese. Fold in half, and fry in the same pan until golden on each side, cut and serve with salsa.
