Main Ingredients
2 1/2 cups all purpose flour
1 1/2 cups chopped pecans
1/2 tsp salt
1 cup butter
1/2 cup sugar
1 tsp almond extract

3/4 lemon juice
1 tbsp lemon zest
3/4 cup sugar

Recipe Steps
- Preheat oven to 350f Prepare 2 baking sheets with parchment. In a medium bowl combine flour, pecans, and salt, set aside. Using an electric mixer combine butter and sugar mixing until light and fluffy about 3 minutes, add almond extract, and combine. Carefully pour the dry ingredients into the wet, and mix until combined. Refrigerate for 20 minutes, then roll out on lightly floured surface, and cutout with cookie cutters, place on prepared baking sheets an inch apart, and bake for 15 minutes.
- Lemon curd- Place all ingredients (except butter) in a medium saucepan, cook over medium low heat for about 6-10 minutes whisking constantly, until thick. Remove from heat and whisk in butter.
