1/4 cup leftover steak thinly sliced

- In a large skillet, melt butter over medium heat, add the oregano, red onion, red pepper, mushrooms, sauté about 5 minutes, add the steak, cook for an additional minute. Move mixture to a bowl. On half the flour tortilla, put the steak and veggie mixture, top with cheese, and fold over, press down lightly. Re-heat the skillet and toast the quesadilla until golden on both sides about 3 minutes.
