1 tbsp butter
1 small onion chopped
1/2 tbsp madras curry powder
8 oz carrots chopped 1inch pieces
1 lb sweet potato peeled and chopped into 1inch pieces
1 apple peeled and chopped
4 cups chicken stock
1/2 tsp orange zest
1/2 tsp salt
1/4 tsp pepper

Recipe Steps
- In a large pot over medium low heat, melt butter, add onions and cook until soft, about 6 minutes. Add curry powder and cook for an additional minute.
- Add the carrots, sweet potato, apple, and chicken stock, bring to a boil. Reduce to a simmer, and simmer for 30 mins uncovered, until all the vegetables are soft.
- Add orange zest, and season with salt and pepper. Blend with an immersion blender until smooth.
